Refreshing fermented dairy drinks are popular in Tatar cuisine. Kumis is traditionally made from mare’s milk, while tan and ayran are made from cow’s milk. Honored guests in Tatarstan are served boza — a low-alcohol drink made from wheat, millet, or corn. In cold weather, it is customary to drink black tea with fragrant herbs and honey from small bowls (piyalas).
