The menu is inspired by recipes from across the vast Russian Empire, including river and sea fish dishes with sturgeon, tender boiled and roasted meats, pies and pirozhki, pelmeni and vareniki, assorted pickled and fermented vegetables.

Peter the Great feasted here, Alexander Pushkin caroused here, and Catherine II, Alexander I, and Nicholas II all paid visits. Mikhail Lermontov immortalized Peterhof's finest restaurant in his poem "Mongo."
