This is one of the most beloved dishes among locals. In Kuban, borscht is cooked in a clear broth made from beef brisket, with a sauté of onion, carrot, sweet pepper, and beetroot fried in fresh pork fat. Key ingredients include homegrown tomatoes or tomato paste, and, of course, cabbage.
