Traditional Ural pastries. This dish is part of Russian, Komi, and Udmurt cuisine and is considered a “taste of childhood” in the Urals, as well as a symbol of home cooking and comfort. These open-faced pastries are made from yeast dough with a savory filling. In Magnitogorsk, they are most often made with mashed potatoes, although versions with cottage cheese, barley porridge, or mushrooms are also available.
